- Babycorn – 200 / 1 packet
- Water – To Boil
For Batter:
- Maida – 3 tbsp
- Rice Flour – 3 tbsp
- Cornflour – 3 tbsp
- Salt – to taste
- Black pepper powder – ½ tsp
- Ginger garlic paste – ½ tsp
- Turmeric Powder – ¼ tsp
- Red Chilli Powder – 1 tsp
- Oil – to deep fry
For the Sauce:
- Oil – 3 tbsp
- Chopped garlic – 1 tbsp
- Chopped Ginger – 1 tbsp
- Capsicum – 2 tbsp
- Chopped Green Chilli – 2
- Chopped Onion – 1
- Spring Onion Whites – 2 tbsp
- Spring Onion Greens – 2 tbsp
- Salt – to season
- Black Pepper – 1/4 tsp
- Red Chilli Powder – 1 tsp
- Tomato Ketchup – 2 tbsp
- Red Chilli Sauce – 1 tbsp
- Dark Soy Sauce – 1 tsp
- Vinegar – 1 tsp
- Cornflour – 1 tsp
- Water – to dilute the corn starch
- Sesame Seeds – For garnish

👩🍳 How to Make Chilli Baby Corn- Step by Step Process:
Step 1: Boil the Baby Corn
- Slice the baby corn into 4 pieces. Add the baby corn to boiling water.
- Boil it for 5 to 7 minutes on medium flame.
- Turn off the flame, strain the baby corn, and save it on a plate.

Step 2: Prepare the Batter
- Take a mixing bowl. Add the same amount of each plain flour/Maida, Cornflour, and rice flour. It will give you the crunchiest coating.

- Then add turmeric powder, red chilli powder, salt to taste, Black pepper powder, and Ginger garlic paste.

- Mix it once. Gradually add water to form a smooth, lump-free medium-thick batter.
Step 3: Fry the Baby Corn
- Dip the boiled baby corn pieces into the batter, ensuring they are well-coated.

- Heat oil in a deep pan over medium heat. Drop one by one, batter-coated baby corn & stir it once.

- Don’t overcrowd. Keep the flame medium. Flip and fry the coated baby corn until golden brown and crispy.
- Similarly, fry the 2nd batch, then take it out and save it on a plate. Rest it for 5 minutes.
- For a crisper, heat the oil on a high flame. Carefully drop the fried baby corn and fry it for 1 minute.
- Super crispy baby corn, ready to drain out and save on a paper towel.

Step 4: Prepare the Sauce
- In a wok or large pan, heat 2 tbsp of oil until hot.
- Add chopped garlic & chopped ginger. Saute for 30-40 seconds until fragrant.
- Add chopped onion, Chopped capsicum and slit green chillies. Stir fry for 2 minutes. Don’t overcook, keep crunchy. Add spring onion whites & green ½ cup & cook 1 minute.

- Pour tomato sauce, chilli sauce, soy sauce, and vinegar into the pan.
- Add red chilli powder, black pepper powder, and salt to taste. Cook, stirring continuously, until the sauce thickens and becomes glossy.

- Take a bowl, combine 1 tsp cornflour and water, and make a lump-free slurry.

- Dilute & add. Quickly stir constantly, and add ¼ cup of water. Sauce gets thick, then add fried baby corn to the sauce.

- Keep the flame high. Toss well to coat. Crispy baby corn is ready to serve.

Step 5:Garnish and Serve
- Garnish with chopped coriander leaves, spring onion, and sprinkle with til/sesame seeds
