Whenever I went to the market with my father, I still remember there was a sweet shop little town where we lived in Odisha. One old man sold Pakora and jalebi there. My father and I both ate pakora and jalebi on one plate. Both combinations were amazing. One is spicy pakora, and the one is sweet jalebi, melt-in-mouth. We bring back hot and delicious jalebis for my mom. Those were the best jalebis I have ever had.

You might have never heard of instant jalebis, but it is possible that I tried them in my kitchen.

This recipe is my favorite because it requires fewer ingredients and is a straightforward recipe. Homemade jalebis can be enjoyed warm, fresh, and offer a superior, unique taste and texture compared to store-bought versions. Making jalebi in my kitchen offers a sense of comfort and relaxation. And the aroma and taste of freshly made jalebi, just waoo.Plus, I can control the amount of sweetness for my health. Even novice cooks can successfully make jalebi at home.

Ingredients we need to make Jalebi

For batter:

  • Refined Flour – 1 cup /150g
  • Cornflour – 4 tbsp
  • Baking soda – 1/4 tsp
  • Food colour – 1/4tsp
  • Yogurt – 4 tbsp
  • Water – 150ml

For Sugar syrup:

  • Sugar – 3 cups
  • Water – 1&1/2  cup
  • Lemon juice – 1 tsp
  • Cardmom  – 5 to 6 no.

For deep frying:

Oil

How to make Jalebi (step-by-step process )

Step 1 – Make the batter

  • Take a mixing bowl and add plain flour or maida, cornflour, baking soda, and food coloring.
  • For instance, jalebi Curd (yogurt) is commonly added to jalebi batter to aid fermentation, and water is gradually added to form a smooth flowing batter. The amount of water to be added depends on the quality of flour used.
  • Using a spatula, spoon, or wired whisk, first mix. Break any lumps while mixing. You can also use your hands in one direction to incorporate air for mixing.
  • Not too thin, not too thick, a flowing consistency batter is ready. Cover and keep aside for 20 minutes.

Step 2 – Make the Sugar Syrup

  • Heat a tall pot or saucepan on medium flame. Add sugar and water, mix until sugar is fully dissolved.
  • Once it comes to a boil, add crushed cardamom, and boil the syrup until it reaches a one-string consistency.
  • Add 1 tsp of lemon juice; this will prevent the sugar from crystallizing and give the jalebis a tangy taste later.
  • Stir it once the sugar syrup is ready. Switch off the flame and let the syrup temperature drop to warm.

Step 3 – Make the jalebis

  • Before making jalebi, take a squeeze sauce bottle or a piping bag. I used a sauce bottle, filled the jalebi batter into the bottle, and closed the cap.
  • Now, heat ghee or oil in a wide-bottomed pan on a medium flame. If using oil, then add 1 to 2 tbsp of ghee to the oil. It enhances the flavor.
  • Once the ghee feels warm enough, test by dropping a drop of batter. If the batter fluffs up gradually, then the ghee is hot enough to make jalebis.
  • Squeeze and make concentric rings with the batter. Start from the center and move outside or vice versa. Be careful while making jalebi as the oil is hot.
  • Once shaped, let it cook for 15 -20 seconds undisturbed.
  • Make 3 to 4 jalebis at a time. Don’t overcrowd the pan. If needed, keep the flame low to keep the jalebi crisp for a little longer.
  • Flip and fry the jalebis with a fork, bamboo skewer, or prongs and cook on both sides until golden and crispy. 

Step 4 – Soak in Sugar Syrup

  • Remove the fried jalebis and immediately soak them in the warm sugar syrup. Make sure that the sugar syrup is neither too cold nor too hot. Keep it warm at all times.
  • Let them soak for about 1 to 2 minutes, flipping both sides.
  • Ensuring they absorb the syrup well, Over-soaking can make them soggy, so remove and place them on a plate to cool slightly. Super crispy and juicy jalebi are ready.
  • Similarly, make all jalebi this way.

  • Serve jalebi hot, warm, or at room temperature. Jalebi can be served alone or in combination with other food items like samosa, poha, and milk, etc.
  • Jalebi is eaten without any sides, but in some regions it is eaten with milk, rabdi, or curd.
  •  Jalebi can also be served for breakfast with a glass of warm milk.
  • You can garnish with mixed nuts for added elegance.

Storing Jalebis

Store leftover jalebi in an airtight container after it has completely cooled down. It will stay crisp at room temperature for a day and in the fridge for 2 days.

Tips and Tricks For Making Jalebi

I have assembled my best tips and tricks for making these yummy, crispy, delicious jalebis.

  • Making jalebi batter consistency is the key, so it should be neither too thick nor too thin, but flowing.
  • The sugar syrup should be of one-string consistency and be warm or lightly hot when you dunk the fried jalebi in it. Add lemon juice to prevent crystallization 
  • Maintain Optimal Oil Temperature. The oil temperature has to be moderately hot when frying jalebi. If the temperature is too high, it will brown the outer crust first and keep the insides uncooked, and a lower temperature oil will make the jalebi soggy and not crisp.
  • Utilize a squeeze bottle or piping bag with a nozzle opening of about 2–3 mm.
  • After frying, immerse the jalebis in warm (not hot) sugar syrup.
  • Do not use a very wide pan, as soaking the jalebis with enough syrup will be difficult.
  • Use a heavy-bottomed wide pan for frying; it is perfect for frying jalebi. 
  • Fry jalebis in small batches, 3-4 at a time.

  • Use jaggery instead of sugar for the syrup. As Jaggery is a natural sweetener.
  • Instead of deep-frying, cook the jalebis on a non-stick skillet with minimal oil or ghee.
